Sparkle Dewdrop Feeding Time

An update on the sourdough starter I grew from yeast floating around in the air earlier in the pandemic. Her name is Sparkle Dewdrop and she’s still going strong. I feed her once a week. You can tell she’s hungry because of the liquid in the jar. I pour some of that off and mix the rest back in. Then I pour off some of the starter, reserving a 1/2 cup in a clean jar. I sometimes use the discard to make sourdough biscuits. Super easy. Recipe here: https://www.kingarthurbaking.com/recipes/buttery-sourdough-sandwich-biscuits-recipe

Now, she’s ready for her feeding. I add a 1/2 cup of flour and a 1/2 cup of water. Stir it up. The key is equal parts. I add more if I intend to use the starter to make bread. If it’s just a holding pattern, I keep her small.

This is about an hour after feeding. She’s already growing. That means she is healthy.

Note: I have NOT perfected a bread recipe. I keep trying, though.
