Look at these pretty golden beets from the Boise Farmers Market. They look a little like radishes in the photo above. Not so when sliced open.
Carrot-like color with swirls. My intention was to toss pieces with olive oil, sprinkle with basil and salt and roast them.
But, it was 100 degrees and I didn’t want to turn the oven on. So I shredded them, sprinkled on some salt and pepper and a little squeeze of an orange for a salad/slaw.
