For St. Patrick’s Day: Corned Beef Recipe

Here’s how I make it at home.

 

Recipe: 

1 corned beef, 3-4 pounds – soaked in cold water for about 10 minutes, rinsed and patted dry.

The corned beef I purchased came with spices/peppercorns. Line a shallow baking dish with enough foil to seal the beef. Sprinkle half the spices on the foil, add one sliced orange, 3-4 cloves of garlic and a couple of stalks of celery. Place beef on top and top off with the other half of the spices, another sliced orange, more garlic and celery.

Seal beef and spices into a packet and bake at 325 degrees for 4 hours. When the internal temp 160 degrees means it’s done. Let it cool slightly and trim the fat. Slice and serve, or slice for sandwiches later.

My husband said it was good, but not as good as the day he ordered this at the Las Vegas Carnegie Deli in the Mirage.
