So many questions about…potatoes

We have a “Dr. Potato” in Idaho. I learned that yesterday thanks to a tweet by the Idaho Potato Commission. Dr. Potato’s page is where people can ask questions about potatoes and the people have a lot of questions. 721 to be exact. So far.

The top questions last year were about how to store peeled potatoes, how long can cooked potatoes be stored in the refrigerator, and is it OK to eat potatoes with green skins?

Answers: store peeled potatoes in water in the refrigerator, four days, and scrape the green skin off because it tastes bitter. Poisoning CAN happen, but you would have to eat a lot of green potatoes. Have you seen that Arthur TV show episode about the green potato chip? My kiddo saw it when she was younger and believed the danger of a green chip for years.
